Chevre marinated in herbs and oil


4 small wheels of semi-soft goat cheese (chevre), carefully halved
zest of lemon or lime, in strips
1 bay leaf
1 sprig of thyme
1 Tbs. white or black peppercorns
olive oil to cover
Sterilize a glass jar. Combine all ingredients in the jar and marinate 2 weeks. Serve on top of green salad and torn basil leaves.
