Chlled Cucumber Soup


adapted from The Greenmarket Cookbook

8 med. cucumbers, peeled if you like
1/4 c. lemon juice
2 tsp. salt
1/4 tsp. pepper
2 tbs. white wine vinegar
1 1/2 tsp. curry powder
pinches of cayenne and cardamom
1 c plain yogurt

Chop and blender all but one cucumber with all but the yogurt in tw batches. Stir in yougurt and chill. Garnish with remaining cucumber, seeded and thinly sliced.
