Greens
Green timbale

A timbale is a kind of savory custard, a quiche without its crust!
4 Tbs. butter, or half buter, half olive oil
1 large onion, chopped
1 lb. sturdy greens, cleaned and torn
1/4 c. milk
1/2 c. heavy cream
salt and pepper to taste
2/3 c. bread crumbs
1/2 c. gruyere, jarlsbergor mozzarella cheese, grated
5 eggs, lightly beaten
Melt 1 Tbs. butter/oil in a large, deep skillet and cook onions 2 min. Stir in greens and cover. Cook until tender about 7 min., being careful not to burn. Uncover , raise heat and cook, stirring constantly until all liquid
evaporates. Transfer to large bowl and cool a little.
Melt remaining butter/oil and add to greens along with all other ingredients. Mix well and pour into oiled 1 1/2 qt. baking dish. Place dish in roasting pan and surround with boiling water halfway up the sides of the dish. Carefully transfer the whole thing to a 325 preheated oven. Bake until knife comes out clean- 45-60 min. Let sit for 10 min. before attempting to invert the timbale onto a shallow serving platter.
