While the taste of leeks and sweet onions is not the
same, they can usually
stand in for one another in recipes. The following 2
are simple, flexible and
classic. They rely on the fresh quality of the ingredients.
Leek and potato soup (Vichysoisse
when cold)
5 leeks, white and a bit of green parts, cleaned well
and sliced
2 Tbs.butter
4 med. potatoes, peeled and sliced tninly
4. c. chicken broth
1-2 c. cream
salt and papper to taste
Saute leeks in butter for 3 min.in a
large pot. Add potatoes and broth and simmer for 15
min., or until potatoes are tender. Use a blender, food
processor or immersion blender to puree until smooth.
Dump back into pot and season and add cream to taste.
NB: Substitute evaporated milk for all
or part of cream.
Substitute sweet onions for all or part of leeks |
