Kohlrabi Cole Slaw with Paprika
dressing
adapted from Bon Appetit Tastes of the World
3 Tbs. white wine vinegar
1 Tbs. sweet paprika
1/2 c. olive oil
2 tsp. purchased cream-style white horseradish
1/2 tsp. sugar
salt and pepper
2 large kohlrabi, trimmed , peeled and cut into chunks
1 large carrot, ditto
Whisk together first 6 ingredients. Shred vegetables
in food procesor. Slice
kohlrabi leaves thinly to make 1 c. Toss all with dressing.
chill.
More Radishes
Indonesian fruit and vegetable salad
adapted from The Goodness of Potatoes and Root Vegetables,
John Midgley
2 Tbs. rice vinegar
1 tsp. sugar
2 tsp. salt
pinch of cayenne
1 Tbs. water
1/2 cucumber, peeled, seeded, sliced thinly
2 med. apples, peeled, cored, sliced
4 laves cabbage, thinly sliced
1 large white radish (daikon) or 6 smaller red and white
radishes, sliced thinly
2 carrots, julienne Mix first 5 ingredients. Toss with
vegetables.Chill. |
