Beets:
(Beta vulgaris)
Roots and green tops both edible and highly nutritious. A blood tonic, they support the heart, help circulation, and provide good amounts of iron. The tops are rich in calcium and magnesium as well. Good source of B-vitamins, beta carotene, and vitamin C.
Use root and tops raw, in salad. Roast roots in oven, or boil, peel and top with dressing. Add tops to soup, or sauté in olive oil with garlic, add red pepper, raisins, and a splash of sweet vinegar.
