Bok Choy:
(Brassica rapa)
Bok Choy, also known as Chinese white cabbage. is a great source of vitamin A, calcium, and vitamin C. Used in Chinese medicine to cool the body. It has a sweet, crisp, mild flavor that stands up well in stir-fries and cooks nicely in soups. Especially good raw as crudités for sharp tasting dips such as kalamata olive or sun dried tomato.
To keep: Refrigerate unwashed and use as soon as possible.
