Broccoli:

(Brassica oleracea)

With twice the vitamin C of an orange, a highly absorbable form of calcium (in amounts comparable to whole milk), folate, indoles, lutein, potassium, insoluble fiber, sulforaphane, beta carotene, selenium, and proven cancer fighting compounds, this is a bona fide superfood! Protein makes up about 1/3 of its nourishment, plus, one raw cup weighs in at a mere 25 calories!

Use raw in salads or as crudete for dips like hummus or babba ganeau. Steam and spritz with lemon and serve with fresh ground pepper. Or, roast in oven with olive oil and shallots, then sprinkle with balsamic vinegar. Sauté in olive oil with garlic and use to top pasta- add a sprinkle of red pepper flakes and grated parmesan before serving- yummy!
