CHARD
All green or ruby-stemmed, this nutritious
and versatile vegetable adapts to
many cuisines easily. Recipes sometimes suggest removing
the ribs, but if
they are thin and tender, I just chop them up with
the rest.
Swiss Chard
Swiss Chard, a member of the Chenopodiaceae crop family
(which includes beets and spinach), is a cool season
annual. Its lush, tangy leaves and brightly colored,
succulent stalks make swiss chard a delicious, nutritious,
and beautiful vegetable.
To keep: Store unwashed in the refrigerator, but use
as soon as possible.
To preserve: Freeze or dry.
