Collards
(Brassica oleracea acephala)
Lanky, open growing collards are headless cabbage relatives. Collards, a cool season, heat tolerant annual, are grown for their succulent green leaves.
With about as much calcium as milk, a great source of Vitamin A, folic acid, and Vitamin C, this non-heading cabbage is quite the vegetable star!
Easy to prepare by simply stacking leaves on top of each other and slicing into strips. Sauté with oil, garlic and top with some sea salt and a bit of lemon.
To keep: Refrigerate unwashed and use as soon as possible.
To store: Freeze.
