Daikon
(Raphanus sativus longipinnatus)
Rich in enzymes that aid digestion (great choice to serve as side dish with a meal that might have a high fat content), this crisp, white root is shaped much like a carrot and can be used much in the same way. Slice or grate raw or add to soups, stews, or roast in oven with olive oil and other root veggies.
