Garlic
(Allium sativum)

The "king of herbs," garlic has been used throughout time for its powerful medicinal qualities, and rightfully so! From high blood pressure, to parasites, ear conditions, colds and the flu (poor man's antibiotic), garlic enhances the immune system, acts as an antifungal and anticarcinogenic agent while exerting warming (lower fever) and tonifying (liver, kidneys, lungs, pancreas, balance blood sugar) properties on various systems of the body. Eaten to excess in raw state, it can be irritating to the stomach. A mild stimulant to the uterus, use moderately during late stages of pregnancy.

Cut top off entire head, brush with olive oil. Wrap in foil and bake in oven about 350 for 40 min. Will result in a sweet, nutlike flavor- use to top anything from pasta to bread or salads. Careful not to brown too much when sautéing, or will become bitter. Mash for strongest flavor and allow to sit briefly before using for greatest medicinal benefits. Rub inside of salad bowl with cloves before adding greens, or grate directly onto toasted baguette slices, add oil, sundried tomatoes and some cheese to accompany most any savory meal. Rub the inside of a jar and
use the jar to make vinaigrette.

To keep: Keep cool and dry for 24-32 weeks.
