Leeks
(Allium porrum)

A sweet cousin to the onion, rich in potassium, and calcium, with folate, lutein, and Vitamin C.

Use the bulb, green leaves, and the rootlets (soak to loosen dirt, add to soup or sauté). Slice leaves and bulbs lengthwise to clean, brush with oil, season, and grill on the barbecue.

Wash thoroughly, separating the layers.

To keep: Refrigerate unwashed and use as soon as possible.
To preserve: Freeze or dry.
