Parsnips
(Pastinaca sativa)

A cousin to celery and the carrot. A good source of potassium with some calcium. Has a sweet, almost nutty flavor, but its strength can sometimes dominate if cooked with other vegetables, like with soup. Use in dishes as you would a potato. Enjoy steamed and mashed, with butter and seasonings.
