(Pisum sativum)
Once picked, the natural sugars begin to convert to starch, but fresh from the garden, there are few vegetables as sweet and delicate in flavor. Refrigerate and shuck just before cooking. Don't add salt to cooking water though, or the little gems will toughen. Save the pods for soup stock. High in protein, Vitamin A, C, B's, with chlorophyll, calcium, potassium, iron and copper. Also have sappiness, which bind LDL (bad) cholesterol in the digestive tract and moves it out of the body. Try adding to sautéed onion, white wine and tomatoes. Cook down a bit, add basil, seasonings and a shaving of cheese- serve over pasta with a salad for a light, flavorful summer dinner.
