Peppers, like radishes, are available in a variety of sizes, shapes, colors, and flavors.
Here at Ryder Farm, a sweet, bell pepper is grown. The sweet, or bell pepper, is a very good source of Vitamin C and, when red, Vitamin A. Some have difficulty digesting the skin- which can be removed after baking or roasting/charring. Fresh or cooked, the pepper is quite versatile, and has been used readily in various savory dishes all over the world. Stuff with meat, rice, tofu, or grains and bake, or slice for dips or chop into salsa. Add to cornbread recipes and savory muffins.
To keep: Keep cool and damp for 4-6 weeks.
To preserve: Can, freeze, or dry.
