Potatoes

(Solanum tuberosum)

A tuber, they are probably the most universal and widely used vegetable in the world. Helpful in reducing blood pressure and acid, treating ulcers, and reducing inflammation (except for arthritis conditions). Don't peel or you'll loose much of the fiber and many of the minerals offered by this starch carbohydrate that are found just under the skin. High in Vitamin C and potassium- try to bake instead of boil to retain nutrients. Exposure to light during growth or storage will result in green spots on the skin or within the flesh (actually chlorophyll). This indicates the excess presence of solanine- a nerve poison, in which case they, of course should not be consumed.

A favorite summer staple is potato salad. Try making yours this year by slicing about 1/4" thick and steaming the potatoes (skins on), then dress with chopped garlic, olive oil and a shot of vinegar, salt and ground black pepper. Or, cube and add red onion, celery, olives, mustard, celery seed, and a mayonnaise alternative like nayonaise- available at any natural food market.
