Radishes
(Raphanus sativus)
A cool season annual, radishes are available in a variety of colors, shapes, and sizes. From the small, round, red variety sold in most food stores to the long, sweet French Breakfast variety, radishes are spicy, crunchy little roots, they have been grown in Egypt since 2780B.C. Great for anyone who likes a little bite in their salad, mashed potatoes, or any side dish, they help to stimulate the appetite, clear the sinuses of congestion, and aid digestion. They have high water content, with folic acid and some Vitamin C as well as most of the trace minerals. Use greens in soups or for a stir-fry.
To keep: Refrigerate unwashed and use as soon as possible. Do not preserve.
