Rutabaga
(Brassica napus napobrassica)
Rutabagas are a lot like turnips, except for their yellow color, and are often referred to as the super-turnip. A root vegetable, probably a cross between a wild cabbage and a turnip somewhere, they offer a wide variety of nutrients including Vitamins A, C, and some B's, and potassium.
Always cooked, they can be used as you would carrots, or as a tasty puree. Can use rutabaga roots like turnips, cook and serve. Sliced rutabagas make tasty additions to soups. Rutabaga greens are edible, but use only the tender thinnings, Older leaves tend to be coarse.
To keep: Keep cool and damp for 8-16 weeks.
