Squash, summer
(Cucurbita)

Of the soft-skinned variety, summer squashes are very low in calories thanks to their high water content, and offer Vitamin A and C along with minerals like potassium and calcium. They function in helping to cool and balance the body during the summer months.

Extremely versatile, they lend themselves well to summer soups, salads, an dips. Slice about 1/2" thick, brush with oil or marinade and grill. Add to sandwiches, wraps, or serve on focaccia or bruscetta with a cannelloni bean spread. Slice in half, remove pulp/seeds and stuff with a mixture of bread crumbs, onion, egg, and seasonings- bake till browned. Dice and sauté with olive oil, a pat of butter, and onion- add vegetable broth, red pepper, salt, and cheese- use to top your favorite pasta.
