Turnip
(Brassica rapa rapifera)
A cousin of the rutabaga, and part of the cabbage family, turnips have a white skin, with a purple crown. Most notably, they contain Vitamin C, potassium, and some calcium along with anticarcinogens. Use raw as you would a radish, or cook to mellow their slight bite- bake, steam, roast or puree. Use the leaves (high in Vitamin A, C, and folic acid), as you would spinach- raw or cooked- in soups, salads.
